Try this easy to make banana bread, it's packed full of flavour and is a tasty treat for those colder Winter afternoons. Plus for any gluten free lovers out there this is a perfect recipe. . .
Ingredients:
3 Bananas, whole
1 cup Grated Carrots
1 tsp Grated Ginger, fresh
3/4 cup Rolled oats
1/3 cup Maple syrup
2 tsp Baking powder
1 tsp Cinnamon
1 1/3 cups Flour
1/2 tsp Salt
2 tbsp Olive oil
2 tsp Flax seed, ground
1 cup Walnuts
1/2 tsp of Brown sugar
1/2 cup Orange juice, zest
How to make:
Line a loaf pan with parchment paper or grease with coconut oil.
Preheat oven to 210°C.
Combine the wet ingredients in a large mixing bowl, mashing the bananas, grated carrot & ginger, maple syrup, citrus juice and oil.
Carefully fold in the dry ingredients until a thickened batter forms.
Pour the mixture into baking loaf tin/cake dish and sprinkle a few rolled oats over top.
Add sprinkle of coarse brown sugar over top too.
Bake at 210°C for 20 minutes, then reduce heat and bake for an additional 15 minutes at 155°C. The loaf will firm up a bit as it cools, but keep in mind that this is a hearty, more dense loaf with lots of texture in every bite.
Allow too cool, slice and serve.
Store leftover, covered, in the fridge or freezer and re-warm to serve.
