Refreshing Summer Courgette Noodle Salad with Microgreens


Full of goodness and very easy and quick to make.


Ingredients

  • 3 Courgettes (small to medium size) - I used the yellow Sunstripe FI variety as their colour is wonderful :)

  • Finely chopped fresh Flat Leaf Italian Parsley

  • Chopped Sun-Dried Tomatoes (to your taste). I love sun dried tomatoes so I used a small jar size.

  • Chopped Kalamata Olives (a generous handful)

  • 1/2 Red Bell Pepper finely chopped

  • Finely sliced Red Onion (one large size)

Citrus Vinaigrette Dressing

  • Juice of a whole Lemon

  • Salt and pepper to season

  • A good splash White Wine Vinegar

  • A good splash of Olive Oil

  • 1/2 tsp Dijon Mustard

  • 1 Tsp of honey

Mix together the above ingredients and then pour over the entire salad making sure to cover evenly.


How to make

Follow these quick and easy steps to make this delicious refreshing summer salad.

STEP 1

Wash and dry courgette and place on a cutting board. With a sharp knife, cut off the ends of the courgette so the surface of both ends is flat. Use a spiralizer to make noodle like slices.

STEP 2

In a large mixing bowl, add courgette noodles, finely chopped parsley, chopped sun-dried tomatoes, chopped olives and red bell pepper, and finely sliced red onion. Add the vinaigrette dressing and season with salt and pepper if required. Toss the salad gently to combine.

STEP 3

Cover salad and transfer to the refrigerator for at least 30 minutes. Gently toss again prior to serving.

STEP 4

Sprinkle your favourite microgreens as garnish before serving. Here in the photo I used red clover.
